  • 2 large baking potatoes, peeled and cut into chunks to fit in a food processor tube
  • My Personal Note: For healthier potato pancakes, I have often substituted 1 large yam or sweet potato for 1 of the baking potatoes. So good for you and wonderful flavour. No, Barb Rolek did not think of that ;)
  • 3 large eggs, lightly whisked
  • 1-1/2 Tbsp. all-purpose flour
  • 1-1/4 tsp. salt
  • 1 tsp. freshly grated black pepper
  • 4 Tbsp. grated onion
  • *I increase the amount of grated onion from that found in the original recipe.
  • My Personal Note: I like to add a pinch of freshly grated nutmeg which adds incredible flavour.
  • Vegetable shortening for frying
  • Makes about 12 (3 inch) pancakes

Directions
  1. Insert the grating disk into the food processor.
  2. Push potato chunks down into the shoot.
  3. While the processor is running, add the eggs, flour, salt and pepper down the shoot.
  4. Process until well combined.
  5. In a large, heavy skillet on medium high heat, add enough vegetable shortening to come to a depth of at least 1 inch.
  6. Heat until hot, but do not allow the oil to smoke.
  7. Drop tablespoonfuls of potato mixture into skillet and spread out to a 3 inch circle, about 1/4 inch thick.
  8. Fry until brown on the bottom (do not turn until the pancake is brown or it will stick), about 3 to 5 minutes.
  9. Reduce the heat to medium if necessary, to prevent burning.
  10. Turn the pancake and fry on the other side 3 to 5 minutes or until golden brown and crisp.
  11. Drain on paper towels.
  12. Serve with applesauce and sour cream.
  13. Original recipe suggests granulated sugar but I don't think it's necessary.
  14. Suggestion: Add 2 tablespoons grated onion and or 1 grated garlic clove to the batter, and or 2 tablespoons fried, chopped bacon, if desired.

This sounds lovely although I am not sure about the sugar or applesauce (but then, that's me - I don't like sweet and savoury). I think they would be lovely with some grilled meat or just a salad.

Thanks for posting the recipe Lor and allowing us to obtain it here at Group Recipe. You've got my 5 forks but quite honestly, I make my potato pancakes the same way and my recipe didn't come from Barb Rolek. My recipe came from a very old cookbook I have and the recipe is a latke recipe. Maybe she took it from there?


Wow, i don't think I like Barbara Rolek anymore.... I would be flattered if somebody would add my recipes to their collection, not upset!?!?! And I thought the Polish Potato Pancakes were invented by Polish people, not by Barbara Rolek! To tell you the truth, I do not see a big difference in the recipe I have from my Granny to this Barbara Rolek recipe?!? She probably had it from her Grandma, too - so, why so much ownership over it?


I have just realized that Barbara Rolek gave a bad mark to her own recipe! This is funny!

According to Barb Rolek, who has recipes on about.com, whenever a recipe is posted from a site, we must submit that site and not just the name of the the individual. Therefore, the original recipe for Polish Potato Pancakes or Packi Kartoflane that I posted, is from http://easteuropeanfood.about.com/od/starches/r/potatopancakes.htm. I had changed the original recipe according to the way I like it, so I would say I have combined the recipe that Barb Rolek posted on about.com and my personal preference/idea.

My "bobzi" used to make these although she grated everything with the grater but she never could tell me how much of everything. Thanks for the recipe i haven't had them in years and I can't wait to have them again.... You brought back a great childhood food.

Potato pancakes are a made-in-heaven recipe for Poles! My mom loves them.
