Caribbean Pork Roast Recipe
CARIBBEAN PORK ROAST This recipe came from an estate sale. I obtained it when I purchased the family collection from the Nelson Estate in Tulsa, Oklahoma in 1992.

Ingredients
  • 2-1/2 pound boneless pork roast
  • 1 cup orange juice
  • 1/2 cup lime juice
  • 1-1/2 teaspoons ground cumin
  • 1-1/2 teaspoons red pepper sauce
  • 3/4 teaspoon ground allspice
  • 1 medium green bell pepper cut into eighths
  • 1 medium white onion cut into fourths
  • 4 cloves garlic crushed
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1-1/2 teaspoons granulated sugar
  • 1/2 teaspoon salt

Directions
  1. Trim fat from pork then pierce pork deeply all over with meat fork or skewer.
  2. Place pork in heavy plastic food storage bag.
  3. Place remaining ingredients except salt and pepper, sugar and 1/2 teaspoon salt in blender.
  4. Cover and blend until smooth then pour mixture over pork.
  5. Seal bag and place in dish then refrigerate 4 hours turning occasionally.
  6. Heat oven to 325 then remove pork from marinade and refrigerate marinade.
  7. Sprinkle pork with salt and pepper then place pork on rack in shallow roasting pan.
  8. Insert meat thermometer so tip is in center of thickest part of pork and does not rest in fat.
  9. Roast uncovered for 2-1/2 hours then remove pork from pan.
  10. Cover and let stand 15 minutes before slicing.
  11. Pour marinade into saucepan then stir in sugar and 1/2 teaspoon salt.
  12. Heat to boiling then reduce heat and simmer uncovered 5 minutes stirring occasionally.
  13. Serve sauce over pork.
