Caribbean Pork Roast

- 2-1/2 pound boneless pork roast shopping list
- 1 cup orange juice shopping list
- 1/2 cup lime juice shopping list
- 1-1/2 teaspoons ground cumin shopping list
- 1-1/2 teaspoons red pepper sauce shopping list
- 3/4 teaspoon ground allspice shopping list
- 1 medium green bell pepper cut into eighths shopping list
- 1 medium white onion cut into fourths shopping list
- 4 cloves garlic crushed shopping list
- 1/2 teaspoon salt shopping list
- 1/2 teaspoon freshly ground black pepper shopping list
- 1-1/2 teaspoons granulated sugar shopping list
- 1/2 teaspoon salt shopping list
How to make it
- Trim fat from pork then pierce pork deeply all over with meat fork or skewer.
- Place pork in heavy plastic food storage bag.
- Place remaining ingredients except salt and pepper, sugar and 1/2 teaspoon salt in blender.
- Cover and blend until smooth then pour mixture over pork.
- Seal bag and place in dish then refrigerate 4 hours turning occasionally.
- Heat oven to 325 then remove pork from marinade and refrigerate marinade.
- Sprinkle pork with salt and pepper then place pork on rack in shallow roasting pan.
- Insert meat thermometer so tip is in center of thickest part of pork and does not rest in fat.
- Roast uncovered for 2-1/2 hours then remove pork from pan.
- Cover and let stand 15 minutes before slicing.
- Pour marinade into saucepan then stir in sugar and 1/2 teaspoon salt.
- Heat to boiling then reduce heat and simmer uncovered 5 minutes stirring occasionally.
- Serve sauce over pork.
