Ingredients

1 - 10oz bottle Maraschino Cherries

1 3/4 cups all-purpose flour

2 tsps baking powder

1/2 tsp salt

2/3 cup firmly packed brown sugar

1/3 cup butter or margarine - softened

2 eggs

1 cup mashed bananas

1/2 cup macadamia nuts or walnuts

Directions

Drain maraschino cherries - reserve 2 tblspns juice

Cut cherries into 1/4s & set aside

Combine flour, baking powder & salt in a small bowl & set aside

In medium sized mixer bowl, combine brown sugar, butter & eggs & reserved cherry juice

Mix at medium speed of electric mixer until ingredients are thoroughly combined

Add flour mixture alternately with mashed bananas, beginning & ending with flour mixture

Stir in cherries & nuts

Grease & flour a 9x5x3 inch loaf pan & spread batter evenly in pan

Bake in pre-heated 350 degree oven for about 1 hour or until loaf is golden brown & a toothpick inserted in the center comes out clean

Remove loaf from pan onto wire rack & cool completely

Store in tightly covered container or in tin foil
