How to make it

  • Season chicken with salt and pepper; Place chicken, celery and onion in a Dutch oven. Cover with water; bring to a boil. Reduce heat; cover and simmer until chicken is tender (about 20 minutes per pound). Remove chicken and keep warm. Add water to measure 4 qts. Set aside 1/2 cup for dumplings. Return remaining broth to the Dutch oven; add Poultry seasoning and bouillon.
  • For dumplings, in a large bowl combine the flour, baking powder and salt. Cut in the shortening with a pastry blender until the mixture forms fine crumbs. Stir in enough hot broth to make a firm but manageable dough.
  • Meanwhile, bring broth to a boil. Roll dough to 1/16-in. thickness; cut into 2-in. squares. Drop one at a time into boiling broth. Reheat the broth to boiling over high heat. Reduce the heat to medium and cook dumplings uncovered until tender, about 15 minutes. Serve immediately with the chicken.

    I have a question. Maybe dumb, but do you strain the broth after the chicken is cooked?

    I woke up craving my grandmothers chicken and dumplings and my search immediately turned up your recipe. Oddly enough, my grandmother is a Johnson from Laurel. I suspect we are related. I will know for sure once I use your recipe!

    I found your recipe last year and have been using it ever since! Absolutely the best slick dumplings! I just picked up an antique Wagner Ware dutch oven at an auction and can't wait to make this recipe using an authentic cast iron dutch oven!!! Thanks for posting this recipe!

    I LOVE chicken & dumplings! My Great Grandma Herzberger used to make it with potato dumplings...WONDERFUL!!! It took me years to replicate her recipe, 'cause I was only 6 years old when she died, but I remembered them so well!
    One of my girlfriends' family made this type of dumpling; they called them sliders. I've never had them, but they really sound worth trying. Thanks for the recipe!

    Until I went back to Maryland, I had only experienced fluffy dumplings. Slippery dumplings are in their own world of fantastic goodness! Once I tried these, I was hooked and my Great Aunt used to make them for me. She lives in Pokemoke, MD. Thank you for sharing the recipe =)

    Great Recipe. No one can beat anyone's Grandma's chicken & dumplings. There is just something magical about them. Brings back memories of my Grandma's farm.
