Ingredients
  • 5 slices French or Italian bread, crusts cut off and cubed
  • 2 lbs. sausage (I use hot Italian or Hot Jimmy Dean) your choice
  • 2 cups X-tra sharp cheddar cheese
  • 6 eggs
  • 2 cups milk
  • 1 tsp. dry mustard
  • 1 tsp. salt
  • couple grinds of pepper
  • 1 green pepper, chopped
  • 1 small sweet onion, chopped
  • 1/2 lb mushrooms, sliced (I like baby bellas or creminis)

Directions
  1. Place bread cubes in buttered 9 x 13 inch baking dish
  2. Brown and drain sausage
  3. Spoon sausage over bread
  4. Sprinkle on half of the cheese
  5. Beat together the eggs, milk, mustard, salt and pepper and set aside
  6. Saute green pepper, onion and mushrooms
  7. Spread sauted vegetables on top of cheese layer
  8. Stir again and then pour milk mixture overall
  9. Sprinkle on the rest of the cheese
  10. Cover and refrigerate overnight (or 8 hours)
  11. Set out to bring to room temp. for 30 to 45 minutes
  12. Bake at 350 for 35 to 40 minutes
  13. Let set for 10 to 15 minutes before cutting into squares and serving
