Crispy Rosemary Chicken And Fries Recipe

Ingredients

8 chicken thighs

6 small red potatoes,quartered

1/2c extra virgin olive oil or as needed

1Tbs chopped fresh rosemary

11/2tsp chopped fresh oregano

11/2tsp garlic powder

salt and pepper to taste

Directions

Preheat oven to 375 degrees

Place chicken and potatoes in large bowl. Pour olive oil over them,and stir to coat. Scatter the chicken and potato pieces in a large baking dish or cookie sheet with sides.

Sprinkle with rosemary,oregano,garlic powder,salt and pepper.

Bake for 1 hour in preheated oven,uncovered. Baste during last 15 mins for extra crispness.

I am sorry to ask, but why do you need the EVOO? Thighs should provide enough oil. I would use some Italian dressing on it instead. Anyway, I will use this recipie!
