Mascarpone Coated Berries in Puff Pastry

A very simple, yet pretty recipe. Great for brunch buffets or a light lunch dessert. You do want to use fresh berries, for this, but any type will do!
Ingredients
- 1 package puff pastry shells, baked and cooled shopping list
- 8oz mascarpone cheese, room temp shopping list
- juice from 1/2-1 lemon shopping list
- 1-2T honey shopping list
- 3 cups fresh berries(strawberries, blueberries, black or red raspberries, etc) shopping list
How to make it
- Whip cheese with honey and slowly add lemon juice to thin out, slightly.
- Carefully fold in berries
- Serve in prepared pastry cups.
- Garnish with fresh mint, if desired
