Ingredients

8 large red potatoes (about 5 pounds)

1 large can of diced tomatoes

Salt and pepper to taste

1 cup chopped fresh italian parsley leaves chopped

1 medium chopped green onion

3 large cloves garlic, thinly sliced

1 heaping teaspoon salt

1 tablespoon Italian spices

1/2 teaspoon dry mustard

1 tablespoon sugar

1 tablespoon Worcestershire sauce

1/4 cup olive oil

1/4 red wine vinegar

Directions

Peel and cut potatoes in half and place into a large pot, cover with water salt generously and bring to a boil.

Cook potatoes over medium low heat until tender but still firm.

Drain water, put potatoes into serving bowl

Combine all the other ingredients with potatoes, stir well and let sit all day.

Serve warm but not hot.

When I saw the red potatoes in this dish I became elated because I just dug some from my garden.
One of my dads and my favorite recipes is Veal potatoes and tomatoes which is just like this, only we added veal chops and simmered them until tender.
