Ingredients
  • 2 tablespoons chopped garlic
  • 1 tablespoon chopped fresh parsley
  • 1/2 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon cracked black pepper
  • 1/2 cup olive oil plus additional for sautéing divided
  • 4 boneless skinless chicken breasts
  • Sauce:
  • 1/2 cup chopped fresh parsley
  • 1/4 cup chopped fresh cilantro
  • 1 shallot diced
  • 3 cloves garlic chopped
  • 3 pickled banana peppers diced
  • 1/2 cup juice from peppers
  • 1/2 red bell pepper diced
  • 1/2 red onion diced
  • 2 cups extra virgin olive oil
  • 1/2 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 4 tablespoons red wine vinegar

Directions
  1. Combine garlic, parsley, paprika, garlic powder, onion powder and pepper then stir in 1/2 cup oil.
  2. Rub chicken with mixture then cover and refrigerate at least 2 hours or overnight if possible.
  3. Preheat oven to 350 then heat enough oil in pan to cover bottom.
  4. Sauté chicken over medium heat about 3 minutes each side until golden brown.
  5. Finish cooking in oven 12 minutes then baste with sauce and cook 10 minutes longer.
  6. To make sauce combine all ingredients and mix well.
