Pear n Ginger Cake

- 1 cup butter - softened & divided shopping list
- 3/4 cup super-fine sugar shopping list
- 1 1/2 cups self-raising flour - sifted shopping list
- 3 tsp ground ginger shopping list
- 3 eggs - beaten shopping list
- 1 lb pears - peeled, cored & thinly sliced shopping list
- 1 Tblspn brown sugar shopping list
How to make it
- Pre-heat oven to 350 degrees
- Lightly grease & line the base of a deep 8 inch cake pan
- With an electric mixer, beat 3/4 cup of the butter & sugar until creamy
- Beat in eggs
- Beat in flour & ginger
- Beat on medium until batter is smooth
- Spoon into prepared cake pan, leveling the surface
- Arrange pear slices in a spiral over the top of the batter
- Sprinkle with brown sugar & dot with remaining 1/4 cup butter
- Bake 35 - 40 mins until cake is golden & springy to the touch & a tooth pick inserted into the center comes out clean
- Cool on wire rack for 10 mins & then turn out onto wire rack to cool completely
- Serve with icecream or whipped cream
