Ingredients

How to make it

  • Pre-heat oven to 350 degrees
  • Lightly grease & line the base of a deep 8 inch cake pan
  • With an electric mixer, beat 3/4 cup of the butter & sugar until creamy
  • Beat in eggs
  • Beat in flour & ginger
  • Beat on medium until batter is smooth
  • Spoon into prepared cake pan, leveling the surface
  • Arrange pear slices in a spiral over the top of the batter
  • Sprinkle with brown sugar & dot with remaining 1/4 cup butter
  • Bake 35 - 40 mins until cake is golden & springy to the touch & a tooth pick inserted into the center comes out clean
  • Cool on wire rack for 10 mins & then turn out onto wire rack to cool completely
  • Serve with icecream or whipped cream

    We have a pear tree in the yard, so I always look for new pear recipes. Never tried adding ginger to pears yet, sounds like a good combination.
