Ingredients

How to make it

  • Preheat oven to 400
  • Heat oil in skillet
  • Add onion and saute until tender
  • Add tomatoes and chilies
  • Cook for 2 minutes
  • Put in mixing bowl and add spinach
  • Mix well
  • Stir in remaining ingredients and mix well
  • Spray shallow baking dish with cooking spray
  • Bake at 400 until bubbly and light brown, about 30 minutes
  • Serve with tortilla chips

    oh yeah gonna have to try this one out this Thursday night!! I'm thinking maybe some crumbled bacon in it as well??

    Do we have chop the spinach or blend it?I usually use fresh spinach..
