Ingredients
  • 2 tbls.Olive oil
  • 1 onion, chopped
  • 2 tomatoes, peeled and chopped
  • 4 oz. can chiles Or jalapenos, chopped
  • 1 10 oz. pkg frozen chopped spinach, thawed, then squeezed dry
  • 2 cups Monterey Jack, grated
  • 1 cup sour cream
  • 1 can sliced black olives, drained
  • 1 tbls. red wine vinegar
  • 1 tbls. garlic powder
  • 8 oz. cream cheese, softened

Directions
  1. Preheat oven to 400
  2. Heat oil in skillet
  3. Add onion and saute until tender
  4. Add tomatoes and chilies
  5. Cook for 2 minutes
  6. Put in mixing bowl and add spinach
  7. Mix well
  8. Stir in remaining ingredients and mix well
  9. Spray shallow baking dish with cooking spray
  10. Bake at 400 until bubbly and light brown, about 30 minutes
  11. Serve with tortilla chips

Do we have chop the spinach or blend it?I usually use fresh spinach..


Oh yeah gonna have to try this one out this Thursday night!! I'm thinking maybe some crumbled bacon in it as well??
