How to make it

  • Sprinkle beef with pepper, paprika and garlic powder.
  • Place in a crock pot with onion, potato, carrots and parsnips.
  • Add beef broth / water and steak sauce that have been mixed together.
  • Cover and cook on LOW for 8 - 9 hours or until tender.
  • Turn to HIGH.
  • Dissolve cornstarch in water and add to the crock pot.
  • Cover and cook on HIGH for 20 minutes or until slightly thickened.

    This is a great beef stew. I followed the recipe pretty close but made a few modifications for personal taste and what I had on hand. I added ¼ tsp salt to the spices and tossed the beef to coat then browned the meat in a cast iron skillet with a tbsp olive oil. Since I had no steak sauce I substituted ½ cup ketchup and ¼ cup Worcestershire sauce added to 2 cups beef stock because I like more soup. I also used a Beurre manie (2 ounces butter mixed with 2 ounces flour until it forms a soft dough) to thicken because I hate using corn starch to thicken any gravy or soup. Start by using about 1/3 of the burre manie and add a little at a time until desired thickness is reached. Left over can be wraped in plastic wrap and used for your you next pan gravy.     Tried this recipe last night and it was great!! Next time I will omit the optional parsnips and add a few more potatoes and carrots to the mix...The gravy has a fantastic taste!!

    If you have noticed that it seems to take longer than the time suggested when using your crock pot / slow cooker, here are a couple of tips that I use. I have crock pots from Rival and my secret trick is to fold a clean dish towel in half and place it over the lid of the crock pot / slow cooker. This keeps in any escaping heat/steam. I also place my crock pot on a large heat resistant circle of cork. If you cook the roast for the suggested time period, without peeking, everything should turn out just fine. It could also depend on where you live and altitude. In some locations there are electrical brown outs where the amount of electricity is reduced. Maybe plan on adding an extra hour to the cooking time or trying a different make of crock pot / slow cooker.
