This is one of my favorite crock pot / slow cooker stews. It's got everything in it that says 'comfort food' for a fall or winter meal.

If you have noticed that it seems to take longer than the time suggested when using your crock pot / slow cooker, here are a couple of tips that I use. I have crock pots from Rival and my secret trick is to fold a clean dish towel in half and place it over the lid of the crock pot / slow cooker. This keeps in any escaping heat/steam. I also place my crock pot on a large heat resistant circle of cork. If you cook the roast for the suggested time period, without peeking, everything should turn out just fine. It could also depend on where you live and altitude. In some locations there are electrical brown outs where the amount of electricity is reduced. Maybe plan on adding an extra hour to the cooking time or trying a different make of crock pot / slow cooker.

Tried this recipe last night and it was great!! Next time I will omit the optional parsnips and add a few more potatoes and carrots to the mix...The gravy has a fantastic taste!!
