An altered stuffed cabbage recipe that saves so much time and energy and tastes as good as the original! Sometime I don't even make the topping, simply layer all the cabbage leaves.

  • FOR CASSEROLE:
  • 3 pounds green cabbage
  • 1 1/2 pounds lean ground beef
  • 1 large onion, chopped
  • 2 teaspoons salt
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon pepper
  • 1/3 cup uncooked rice
  • 8 ounces tomato sauce
  • FOR TOPPING:
  • 2 tablespoons butter
  • 2 tablespoons all purpose flour
  • 1/2 teaspoon salt
  • 2 cups milk
  • 2 eggs
  • 1/3 cup grated Parmesan cheese

Directions
  1. In large kettle, bring to boil enough water to cover the cabbage.
  2. Stick a cooking fork into the cabbage core and lower the head into the water.
  3. Loosen and remove about 20 leaves from the cabbage and drain well.
  4. Chop remaining cabbage coarsely to make 3 to 4 cups.
  5. Heat a large skillet of Dutch oven.
  6. Add ground beef and onion to pan.
  7. Cook slowly, stirring often, until meat begins to brown.
  8. Stir in chopped cabbage, salt, oregano, basil, rice, pepper and tomato sauce.
  9. Cover and simmer, stirring often, for about 20 minutes.
  10. Preheat oven to 350 degrees F.
  11. Trim the thick ribs from the cabbage leaves.
  12. Arrange half the leaves, overlapping slightly, in the bottom of a 13x9x2 pan.
  13. Spoon meat mixture on top.
  14. Top with remaining cabbage leaves, overlapping as before.
  15. Melt butter in small pan.
  16. Stir in flour and salt.
  17. Beat with a whisk until smooth.
  18. Gradually stir in milk.
  19. Bring to a boil, whicking constantly, until sauce thickens and boils for 1 minute.
  20. Remove from heat.
  21. Beat eggs in a bowl with wire whisk.
  22. Gradually beat in hot cream sauce.
  23. Pour evenly over casserole.
  24. Sprinkle with Parmesan cheese.
  25. Bake for 45 minutes OR until top is set.
  26. Brown under broiler, if desired.
