Scottish Shortbread Recipe
A recipe for traditional shortbread that I got from my grandma who got it from my Aunt's grandmother in law from Scotland

Ingredients
  • 1 lb (4 sticks) butter softened
  • 1 cup sugar
  • 1 cup cornstarch ( no this is not a typo)
  • 4 cups ap flour

Directions
  1. Preheat oven to 325
  2. Mix sugar and butter together.
  3. Add cornstarch and mix until all is blended.
  4. Slowly add the flour.
  5. If not using a stand mixer you will probably need to use your hands to add in the last of the flour.
  6. Mix until a ball forms.
  7. With your hands spread out the dough on a cookie sheet (dough will spread, so if you need to divide the dough do so).
  8. Pierce dough with a fork all over.
  9. Sprinkle with colored sugar or jimmies or sprinkles
  10. Bake 10-20 minutes or until the edges are slighlty browned.
  11. ****Let the cookies sit on the cookie tray for 2 mins then cut with a sharp knife.
  12. You can also roll out the dough and use with cut outs. Remember to pierce the cutouts with a fork.

Well 5gals....you know I am a true fan of your Grandma's shortbread...I have made it many times and it is on my Cookie list for my Christmas platters for friends and family. I am so glad to see this recipe here! A scrumptious buttery flakey cookie! Love it!

When measuring the cornstarch should I sift it first? Sometimes there are lumps in it. THX :)

I do not sift the cornstarch.

This was great! I quartered the recipe with wonderful results. Sprinkled with Christmas jimmies and used a pizza cutter to cut them when they were done. I love how such a simple recipe can produce such yummy results!!


This is just great! I just got back from Scotland and loved shortbread cookies especially with tea! I am now a huge fan of High Tea and have got to have it daily now! So I am trying your cookie recipe first thing in the morning. I would never have thought of using cornstarch but it makes so much sense, sort of lightens things up a bit. I will have them tomorrow with my tea sandwiches and tea! Thanks!
