Spicy Beef with Noodles

- 2 medium carrots - peeled shopping list
- 1 kg thick fresh rice noodles shopping list
- 2 Tblsp peanut oil shopping list
- 750 g lean ground beef shopping list
- 1 small onion - thinly siced shopping list
- 2 cloves garlic - crushed & chopped shopping list
- 1/4 tsp Chinese five spice powder shopping list
- 1/2 cup mild, sweet chili sauce shopping list
- 1 bunch (400g) baby bok choy - chopped shopping list
- 1/4 cup hoisin sauce shopping list
- 2 Tblsp soy sauce shopping list
- 1 Tbsp fish sauce shopping list
- 2 Tblsp chopped fresh coriander leaves shopping list
How to make it
- Using a vegetable peeler, cut carrots into long thin strips
- Place noodles in a bowl, cover with warm water, stand 5 mins & then drain.
- Heat oil in a wok or large deep pan
- Add ground beef, onion, garlic & spice
- Stir fry until beef is browned & almost cooked
- Add chili sauce & stir fry until mixture is well browned
- Add carrots, noodles & the remaining ingredients.
- Stir fry until the vegetables are just tender
