Ingredients
  • 1 envelope of unflavored gelatin
  • 1/2 cup cold water
  • 1 cup pineapple juice
  • 1-1/2 cup graham cracker crumbs
  • 1/2 cup sugar
  • 1/2 cup finely chopped nuts (optional)
  • 1/2 cup melted butter
  • 1 pkg each of any 3 oz. flavor gelatin
  • 4-1/2 cup boiling water
  • 16 oz. Cool Whip Topping divided

Directions
  1. Soften unflavored gelatin in cold water.
  2. Boil pineapple juice and stir into unflavored gelatin and set aside to thicken (about 3-4 hours)
  3. Combine graham cracker crumbs, sugar, butter and nuts and then press into a 13 x 9 pan which has been lightly greased on bottom only, CHILL
  4. Place the three gelatins into 3 separate bowls. Add 1-1/2 cup of boiling water into each bowl, stir until gelatin is dissolved.
  5. Pour each into 3 (8 x 4) loaf pans which have been sprayed with non-stick cooking spray.
  6. Chill each till firm.
  7. In a large bowl, place 8 oz of Cool Whip, fold in the thickened pineapple gelatin mixture.
  8. Remove the 3 loaf pans and cut each pan into 1" cubes and gently fold all 3 gelatins into the Cool Whip mixture.
  9. Spoon Cool Whip/Gelatin mixture over the chilled crust.
  10. Spread the remaining Cool Whip over the gelatin mixture.
  11. Chill for atleast 3 hours.

My sister-in-law just described this recipe to me last week. It was her Mother's favorite and her mother called it Prism Cake because when you cut into it, the jello looks like glass and all of the colors in a Prism. I'm definitely happy to see traditional recipes being shared. Life is good, food is good, food is life. Thank you.


My nephews will be at the Fathers Day gathering this weekend so I think I'll give this a try ... thanx! :-)


I love this recipe.... back in the 60's they served it at our school for lunch... Thanks for posting it!
