  • 1 Tbs. olive oil
  • 2 Tbs. fine dried bread crumbs
  • 24 large dates, preferably Medjool
  • 1/4 lb. soft fresh goat cheese

Directions
  1. Preheat an oven to 375°F.
  2. Lightly oil a baking dish just large enough to hold the dates in a single layer.
  3. In a small fry pan over medium heat, warm the olive oil.
  4. Add the bread crumbs and cook, stirring constantly, until the bread crumbs are evenly golden brown, about 1 1/2 minutes.
  5. Remove the pan from the heat, transfer the bread crumbs to a plate and let cool.
  6. Using a small knife, make a small lengthwise incision in each date. Carefully remove the pits.
  7. Stuff 1 tsp. of the goat cheese into the cavity left by each date's pit. Arrange the dates, with the goat cheese side facing up, in the prepared dish.
  8. Sprinkle the bread crumbs evenly over the top.
  9. (The dates can be prepared up to this point up to 24 hours in advance. Store, tightly covered, in the refrigerator.)
  10. Bake the dates until warmed through, 10 to 12 minutes.
  11. Transfer to a serving platter and serve warm.

Ahh yes...I sit her eating a Caramel Medjool Date as i read this very classic recipe...At one time these Jewel's were exclusive to royalty and the elitist...And here we are now...on line and me blessed being able to purchase such jewels by the pound...making vinaigrettes, desserts, and stuffing them or just enjoying as is...."life is good!!'" Stuffed dates are wonderful I first had them at a Tapas style restaurant. I have made them before served at room temperature I like the sound of warming them and also adding the breadcrumbs on top.

This is a great simple recipe. But Medjool dates are awesome just by themselves. They are loaded with complex carbs, so they may catch on with athletes. The nutritional content is listed at http://www.medjool-dates.com
