Moms Spicy Chicken Roast OR Lahori Chargha Recipe
Lahori Chargha...Pieces of chicken marinated in yogurt & spices,cooked and fried till tender.After marinating the chicken,you can either bake it in oven,grill it or steam roast it in a pan but try out this method and enjoy!!!

Ingredients
  • 2 kg. chicken,skinless & cut in large pieces
  • MARINADE:
  • 1 cup yogurt
  • 1 1/2 to 2 tbsp salt
  • 2 tbsp crushed red chilies
  • 2 tbsp red chillies powder
  • 1 tsp chaat masala
  • 2 tbsp white vinegar
  • 1 tbsp ginger garlic paste
  • Few seeds of nigella
  • 1/2 tsp thymol seeds(ajwaiin)
  • 1 tbsp crushed coriander seeds
  • 1/2 tsp turmeric powder
  • 1/4 tsp nutmeg & mace powder
  • Pinch of red/orange food colour
  • EXTRA:
  • 1 tbsp oil,for cooking
  • Extra oil,for frying

Directions
  1. Rinse and clean chicken.Pat dry with paper towels.
  2. Make deep insertions/cuts on each piece of chicken using a sharp knife to allow the marinade to penetrate well.
  3. Place chicken in a dish and keep aside.
  4. Combine marinade ingredients in a bowl to make a paste.
  5. Rub this paste on each chicken piece,as well as on cuts.
  6. Pour the remaining marinade on chicken,cover and refrigerate for 2-3 hours to allow the chicken to absorb the flavours.
  7. Now heat 1 tbsp of oil in a non-stick pan,put chicken and marinade in the pan.
  8. Cook,uncovered for 20-30 minutes or until chicken is tender and the water dries out.
  9. Remove chicken pieces.Heat oil for deep-frying.
  10. When oil is hot,fry chicken pieces in batches on medium-high heat until it turns golden brown on both sides and is roasted well.
  11. Remove from oil.Drain on absorbent paper.
  12. Quickly sprinkle Chaat masala on both sides.Squeeze lemon juice and seve hot.
  13. Serve with French Fries,Yogurt Raita,Salad & Ketchup.
  14. Note:Sometimes,we coat the chicken with corn flour before frying.You can also dip this in beaten egg,coat with bread crumbs and then fry.

This can be also called "Chicken Tikka in a pot/pan".To give it a Bar-b-Que touch,after cooking the chicken,remove from heat.Separately heat a piece of coal until red hot,place it in a small bowl inside the pot/pan.Pour 1 tsp ghee/butter/oil over coal and cover the pot.Open after few minutes.
