A spin on regular ol' meatloaf, made with ground turkey which is leaner so healthier. Remember to slice it thick!

Ingredients
  • 1 cup tomato ketchup
  • 3/4 cup freshly grated Parmesan cheese
  • 2 Tbsp tomato paste
  • 1 Tbsp each dried basil and oregano
  • 2 eggs, beaten
  • 1 small onion, minced
  • 4 cloves garlic, minced
  • 2 tsp worcestershire sauce
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/2 cup fresh bread crumbs
  • 1 1/2 lb lean ground turkey (or chicken)

Directions
  1. Preheat oven to 350F.
  2. Stir ketchup with cheese, tomato paste, basil and oregano; divide mixture in half. Combine one half with eggs, onion, garlic, Worcestershire, salt and pepper. Stir in bread crumbs. Crumble meat into same bowl and toss gently until evenly combined.
  3. Press meat mixture gently into a greaased 8x4" loaf pan. Spread remaining ketchup mixture evenly over top.
  4. Bake for 50 to 60 minutes (or until thermometer registers 185F). Let rest in pan for 5 minujtes; drain off any liquid.
  5. Serve thickly sliced.

Like you, I try to use more and more ground poultry in place of meat and find it works well. I've played with ground turkey for meatloaf, too, and your variation sounds yummy.


Yes, it's great for a change of pace. We're lucky enough to have a shop in our local market that deals exclusively with turkey products, and it's great!


Wow that meatloaf version sounds great!! I'd gotten tired of plain old meatloaf, so this really helps!
Also if your looking for leaner meats, buffalo meat is great. It's the only meat that doesn't use fat as a binder, so its super lean and cooks faster because of that. (I work in a health food store where we sell it)

I liked it. The topping got all sweet and tangy and crunch around the edges. YUM!


Don't try to make a loaf of this, it will be raw mush : ( Its very important to use the right size pan and spread it evenly.


I can't understand what may have gone wrong if you actually tried the recipe. I've cooked it a number of times and it always turns out perfectly.

I have made this.. and it is wonderful... I guess Honeybee can't read.. you did not state making a loaf..DUH... it said to put in a pan... DUH! I hate it when new people come in and try to take over..
