Tuscan Tuna-And-Bean Sandwiches

- FOR THE beans shopping list
- 1 (14oz.) can cannellini beans, rinsed and drained shopping list
- 2 garlic cloves, finely chopped shopping list
- 1 Tbls fresh lemon juice shopping list
- 2 Tbls. olive oil shopping list
- 2 Tbls. chopped, fresh flat leaf parsley or basil (I prefer to use basil) shopping list
- 1/4 tsp. salt shopping list
- 1/4 tsp. black pepper shopping list
- FOR THE tuna SALAD shopping list
- 2 (6oz.) cans Italian tuna in oil, drained shopping list
- 2 Tbls. finely chopped fresh parsely or basil shopping list
- 2 Tbls. capers, chopped shopping list
- 1 celery rib, finely chopped shopping list
- 2 Tbls. finely chopped red onion shopping list
- 2 Tbls. olive oil shopping list
- 1 Tbls. fresh lemon juice shopping list
- 1/4 tsp. salt shopping list
- 1/8 tsp. black pepper shopping list
- FOR SANDWICHES shopping list
- 8 (1/3-inch thick) slice rustic Italian bread (from a round crusty loaf) or 4 (4-inch long) oval panini rolls shopping list
- 1 cup loosley packed trimmed watercress sprigs shopping list
How to make it
- PREPARE BEANS:
- Coarsely mash beans witha fork or a potato masher in a bowl, then stir in garlic, lemon juice, oil, basil or parsley, salt and pepper
- MAKE TUNA:
- Flake tuna in a bowl with a fork, then stir in basil, olives, celery, onion, oil, lemon juice, salt and pepper until combined.
- ASSEMBLE SANDWICHES
- Spoon one fourth of the bean mixture on 1 slice of bread, then top with one fourth of tuna salad, some watercress and a slice of bread. Repeat, making 3 more sandwiches.
