I came across this recipe when I was looking for a new way to prepare tuna fish. I haven't made tuna fish with mayo since! Enjoy!!

Ingredients
  • FOR THE BEANS
  • 1 (14oz.) can cannellini beans, rinsed and drained
  • 2 garlic cloves, finely chopped
  • 1 Tbls fresh lemon juice
  • 2 Tbls. olive oil
  • 2 Tbls. chopped, fresh flat leaf parsley or basil (I prefer to use basil)
  • 1/4 tsp. salt
  • 1/4 tsp. black pepper
  • FOR THE TUNA SALAD
  • 2 (6oz.) cans Italian tuna in oil, drained
  • 2 Tbls. finely chopped fresh parsely or basil
  • 2 Tbls. capers, chopped
  • 1 celery rib, finely chopped
  • 2 Tbls. finely chopped red onion
  • 2 Tbls. olive oil
  • 1 Tbls. fresh lemon juice
  • 1/4 tsp. salt
  • 1/8 tsp. black pepper
  • FOR SANDWICHES
  • 8 (1/3-inch thick) slice rustic Italian bread (from a round crusty loaf) or 4 (4-inch long) oval panini rolls
  • 1 cup loosley packed trimmed watercress sprigs

Directions
  1. PREPARE BEANS:
  2. Coarsely mash beans witha fork or a potato masher in a bowl, then stir in garlic, lemon juice, oil, basil or parsley, salt and pepper
  3. MAKE TUNA:
  4. Flake tuna in a bowl with a fork, then stir in basil, olives, celery, onion, oil, lemon juice, salt and pepper until combined.
  5. ASSEMBLE SANDWICHES
  6. Spoon one fourth of the bean mixture on 1 slice of bread, then top with one fourth of tuna salad, some watercress and a slice of bread. Repeat, making 3 more sandwiches.
