Blue Cheese Crusted Steaks With Red Wine Sauce Recipe
Another one of my favorite blue cheese recipes. Love the combination of the beef, bacon and blue cheese in this delightful recipe. Another one I pulled from recipetips.com and have made twice now and we love it. Hope you do too.

Ingredients
  • 4 tablespoons butter
  • 3 cloves garlic chopped
  • 1 shallot chopped
  • 1 tablespoon thyme chopped
  • 1 cup beef broth
  • 1/4 cup dry red wine
  • 1/2 cup blue cheese coarsely crumbled
  • 1/4 cup panko bread crumbs
  • 1 tablespoon parsley chopped
  • 4 bacon wrapped fillets

Directions
  1. Melt one tablespoon butter in heavy skillet over medium high heat.
  2. Add garlic, shallot and thyme then sauté 5 minutes then add broth and wine.
  3. Boil until sauce is reduced to 1/2 cup approximately 12 minutes then set sauce aside.
  4. Blend cheese, bread crumbs and parsley in a small bowl then preheat broiler.
  5. Melt 2 tablespoons butter in a large heavy skillet over medium high heat.
  6. Sprinkle steaks with salt and pepper then add steaks to skillet and cook 7 minutes per side.
  7. Transfer steaks to a baking sheet then reserve skillet with the pan juices.
  8. Press cheese mixture on top of steaks dividing evenly then broil 2 minutes.
  9. Transfer steaks to plates then pour sauce into the reserved skillet with juices.
  10. Bring to a boil scraping up browned bits then boil 2 minutes then stir in remaining butter.
  11. Season with salt and pepper then spoon sauce over steaks and serve.
