Chocolate Raspberry Bars

I found this recipe at allrecipes.com recently and tried it out at a potluck. It was a HUGE hit. Although I did modify it in one way: more chocolate! The original only called for 3/4 cup of the chips, and that just wasn't enough to spread evenly over the crust. Ingredients
- 1.5 cups flour shopping list
- 3/4 c white sugar shopping list
- 3/4 c butter, softened shopping list
- 1 10 oz package frozen raspberries, thawed shopping list
- 1/4 cup orange juice shopping list
- 1 tbsp cornstarch shopping list
- 2 cups mini semisweet chocolate chips shopping list
How to make it
- Preheat oven to 350.
- Mix flour, sugar and butter together and press batter into the bottom of a 9x13 baking pan. Bake for 15 min.
- Meanwhile, mix the raspberries, OJ, and cornstarch together in a 1 quart pot.
- Heat to boiling, stirring constantly. Boil and stir for 1 minute, then let cool for 10 minutes.
- Sprinkle chocolate chips over baked crust.
- Spoon raspberry mixture over crust and chips and spread evenly.
- Bake 20 minutes or until raspberry mixture is set.
- Remove from oven and let cool. Drizzle with more melted chocolate if desired.
