Turkish Leeks And Carrots Recipe

This is a terrific dish that a Turkish friend of mine used to bring to potlucks. I was reminded of it when I saw it on http://almostturkish.blogspot.com/.

Ingredients
  • 4 leeks, cleaned & sliced about 1/2 inch thick
  • 1 large onion, chopped
  • 2 carrots, peeled & sliced
  • 1/4 cup rice
  • 1/3 cup olive oil
  • Juice of 1/2 lemon
  • 2/3 - 1 cup hot water or chicken stock
  • 1 tsp sugar
  • Salt & Pepper, to taste

Directions
  1. Heat the olive oil in a pan over medium heat.
  2. Toss in the onions and cook for about 4-5 minutes, stirring occasionally.
  3. Add the carrots and continue to cook for another 4-5 minutes.
  4. Add the leeks and cook a few more minutes.
  5. Add the water or stock, sugar, and salt & pepper. Bring to a boil, add the rice and lemon juice. Cover, reduce heat to low, and cook until the rice is done (time will depend on the type rice you use. I usually use jasmine or basmati for this, which take about 20 minutes.)
  6. Serve hot or cold, with a little squeeze of lemon juice.
