How to make it

  • Heat the olive oil in a pan over medium heat.
  • Toss in the onions and cook for about 4-5 minutes, stirring occasionally.
  • Add the carrots and continue to cook for another 4-5 minutes.
  • Add the leeks and cook a few more minutes.
  • Add the water or stock, sugar, and salt & pepper. Bring to a boil, add the rice and lemon juice. Cover, reduce heat to low, and cook until the rice is done (time will depend on the type rice you use. I usually use jasmine or basmati for this, which take about 20 minutes.)
  • Serve hot or cold, with a little squeeze of lemon juice.
