Turkish Leeks And Carrots

- 4 leeks, cleaned & sliced about 1/2 inch thick shopping list
- 1 large onion, chopped shopping list
- 2 carrots, peeled & sliced shopping list
- 1/4 cup rice shopping list
- 1/3 cup olive oil shopping list
- juice of 1/2 lemon shopping list
- 2/3 - 1 cup hot water or chicken stock shopping list
- 1 tsp sugar shopping list
- salt & pepper, to taste shopping list
How to make it
- Heat the olive oil in a pan over medium heat.
- Toss in the onions and cook for about 4-5 minutes, stirring occasionally.
- Add the carrots and continue to cook for another 4-5 minutes.
- Add the leeks and cook a few more minutes.
- Add the water or stock, sugar, and salt & pepper. Bring to a boil, add the rice and lemon juice. Cover, reduce heat to low, and cook until the rice is done (time will depend on the type rice you use. I usually use jasmine or basmati for this, which take about 20 minutes.)
- Serve hot or cold, with a little squeeze of lemon juice.
