Prawns In Garlic Sauce With Sweet Red Peppers Recipe Chihuahua / All my dishes

I'm wild about garlic and prawns. This recipe has plenty of both. Be sure to use high heat, don't overcook the prawns and serve with crusty bread for soaking up the delicious sauce. From The Catalan Country Kitchen.

Ingredients
  • 3 Tbls. Olive Oil
  • 18 large Garlic Cloves, coarsely chopped
  • 1/2 tsp. Red Pepper Flakes
  • 3 large Red Bell Peppers, seeded and cut into thin lengthwise strips
  • Kosher Salt
  • 2 pounds medium Prawns, peeled with tails left in place
  • 1/4 cup fresh Lemon Juice
  • 1/4 cup dry White Wine
  • 2 Tbls. minced fresh Italian Parsley

Directions
  1. Pour the olive oil into a large skillet set over low heat.
  2. Add the garlic, pepper flakes and bell peppers and saute until the peppers are soft, about 10 to 15 minutes, stirring occasionally.
  3. Season with the Kosher salt.
  4. Increase the heat to high.
  5. Toss in the prawns, stir and turn them quickly to the other side, cooking for just 1 minute.
  6. Add the lemon juice and wine and cook for 1 or 2 minutes more, until the prawns are just cooked through.
  7. Transfer to a platter.
  8. Sprinkle with parsley and serve immediately.
