Smoked Salmon Amp Cucumber Tea Sandwiches Recipe

Lovely small decadent sandwiches from Fine Cooking magazine which were adorable and so much fun to serve.

  • 1/2 cup crème fraîche
  • 3 Tbs. chopped fresh dill
  • Kosher salt and freshly ground black pepper
  • One-half medium English cucumber
  • 8 large slices pumpernickel bread, each cut into four 2-inch triangles
  • 1/4 lb. thinly sliced cold-smoked salmon, cut into 16 pieces

Directions
  1. In a small bowl, mix the crème fraîche with the dill and season to taste with salt and pepper.
  2. Peel the cucumber. Then, using the peeler, shave 16 wide strips from several sides of the cucumber (discard the seed core).
  3. In a medium bowl, toss the cucumber strips with 1/4 tsp. salt and let sit until softened, about 10 minutes.
  4. Pat dry with paper towels.
  5. Spread the creme fraiche generously on one side of each bread triangle (you may not use it all).
  6. Top half of the triangles with a folded cucumber strip, a curl of the salmon, and a grind of black pepper.
  7. Set the remaining bread on top and serve.
  8. You can combine the crème fraîche and dill, season to taste, and refrigerate this mixture for up to 1 day, tightly covered.

Another great party post. Course, I pretty much eat this for breakfast at least once a week but the little pumpernickel triangles just give it a little some extra, doesn't it? Five billion forks for reppin the smoked salmon tea sammich!

Wow - where have I been? I see I've missed a number of your recent recipes - and I apologize. I think I was kidnapped by aliens or something...heh.

I love these. I would love to go home to these tonight. I just love the flavor combo on the pumpernickel (one of my fave breads). Mannn, I get hungry just thinking about them.
