Christmas Cake from Norway

- 1 cup granulated sugar shopping list
- 3/4 cup butter shopping list
- 2 eggs + 1 egg yolk shopping list
- 2-1/2 cups all-purpose flour shopping list
- 2 tsp. baking powder shopping list
- 3/4 cup milk shopping list
- 1/2 cup raisins, soaked in whiskey or you can even substitute candied orange peel or cherries or cranberries... shopping list
- Note: Sometimes I add the whiskey that the raisins have been soaking in and omit the lemon extract. shopping list
- 1/2 teaspoon lemon extract shopping list
- 1/4 teaspoon cardamom (you can add more, it depends on your personal taste) shopping list

- I make a simple glaze to drizzle over the top. shopping list
How to make it
- Preheat oven to 350 degrees F (175 degrees C).
- Grease an 11 inch loaf pan.
- Cream butter and sugar until light and fluffy.
- Add eggs one at a time, beating well after each egg.
- Stir in the milk, lemon(or Whiskey) and cardamom.
- Mix in the flour and baking powder.
- If you prefer raisins that have not been re-hydrated, I suggest that you sift a little flour over the raisins then stir them into the batter. Otherwise, I just add the plumped up raisins as they are.
- Pour the batter into the prepared pan.
- Bake at 350 degrees F for 55 to 60 minutes.
- 8 to 10 slices

Lor sweetie, this sounds so delicious. I love those whiskey-happy raisins and like your suggestion to sub the whiskey-raisin soak for the lemon extract at times...yummm! I'll be trying this one soon. I love cakes like this. Thanks so much and high...more
