Ingredients

How to make it

  • Preheat oven to 350 degrees F (175 degrees C).
  • Grease an 11 inch loaf pan.
  • Cream butter and sugar until light and fluffy.
  • Add eggs one at a time, beating well after each egg.
  • Stir in the milk, lemon(or Whiskey) and cardamom.
  • Mix in the flour and baking powder.
  • If you prefer raisins that have not been re-hydrated, I suggest that you sift a little flour over the raisins then stir them into the batter. Otherwise, I just add the plumped up raisins as they are.
  • Pour the batter into the prepared pan.
  • Bake at 350 degrees F for 55 to 60 minutes.
  • 8 to 10 slices

Lor sweetie, this sounds so delicious. I love those whiskey-happy raisins and like your suggestion to sub the whiskey-raisin soak for the lemon extract at times...yummm! I'll be trying this one soon. I love cakes like this. Thanks so much and high 5! :) Vickie
