Mexicana Eggs Recipe
MEXICANA EGGS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Wadsworth Estate in Greenville, Texas in 1990.

Ingredients
  • 5 eggs beaten
  • 2 tablespoons butter melted
  • 1/4 cup all purpose flour
  • 1/2 teaspoon baking powder
  • 8 ounces cream style cottage cheese
  • 2 cups shredded pepper jack cheese
  • 4 ounces canned diced green chilies drained

Directions
  1. Combine first 4 ingredients in medium mixing bowl and beat well.
  2. Stir in remaining ingredients and pour into a well greased pie plate.
  3. Bake at 400 for 10 minutes then reduce heat to 315 and bake 20 minutes.
  4. Cut into wedges and serve.

I eat eggs everyday, so I'm always looking for new ways to prepare them. The addition of cottage cheese and green chiles really sounds yummy!!


Those Texas estate sales sure paid off for you, eh? They contain some verrry interesting recipes.
This one has me wondering about the consistency .... that little bit of flour and baking powder ... what does it do .... I think I'll make it! Thanks.


Think I'd use ricotta instead of cottage cheese but other than that it sounds very interesting, meow.
