Lemon Kissed Snowflakes

- ¾ cup butter, softened shopping list
- ¾ cup sugar shopping list
- 2 teaspssons grated lemon peel shopping list
- 1 large egg shopping list
- 2¼ cups white flour shopping list
- ¼ teaspoon salt shopping list
- glaze shopping list
- 2 cups powdered sugar shopping list
- 1 tablespoon butter shopping list
- 4 tablespoons fresh squeezed lemon juice shopping list
- 2 tablespoons half-and-half, or enough to make the glaze the right consistency shopping list
- crystalized sugar shopping list
How to make it
- In a large bowl, beat butter and sugar with electric mixer on medium speed until light and fluffy.
- Add lemon peel and egg; beat until well blended.
- Gradually beat in flour and salt at low speed, until well blended (you may have to start mixing by hand after the first cup).
- On floured surface, roll dough 1/8” to 1/4" thick.
- Cut with lightly floured snowflake shaped cookie cutter.
- Place cookies on very lightly greased cookie sheet, place 1” apart (they really didn't spread much, so they can be pretty close together).
- Bake at 350 degrees until done (they shouldn't brown), about 9 to 11 minutes.
- Allow cookies to cool a couple minutes, then place them on waxed paper or a cooling rack.
- Prepare glaze by mixing all ingredients together until smooth.
- Drizzle glaze over cookies are still warm, then sprinkle crystalized sugar over the tops.
- Store in an airtight container, or freeze (for maximum freshness).
