Double Nut English Toffee

- 1 1/2 teaspoons plus 2 - cups butter softened and divided shopping list
- 2- cups granulated sugar shopping list
- 1- cup chopped almonds shopping list
- 1- package ( 12 ounces) semi-sweet chocolate chips...divided..... shopping list
- 2- cups pecans or you can use walnuts.... divided ...........( i like the pecans), shopping list
How to make it
- Butter a 15 inch x 10 inch x 1 inch pan with 1 1/2 teaspoons butter set aside
- in a heavy saucepan, combine sugar and remaining butter
- cook and stir over medium heat until a candy thermometer reads 290 degrees( soft crack stage)
- remove from heat stir in almonds
- immediately pour into prepared pan
- sprinkle with 1 cup of the chocolate chips let stand until the chips become glossy........spread evenly over the top
- sprinkle with 1 cup pecans
- cover and refrigerate until set about 1 hour...........
- in microwave melt remaining chips
- stir unti smooth
- spread over toffee and sprinkle with remaining pecans..cover and refrigerate again for 30 minutes
- then break into 2 inch pieces
- store in an airtight container
- yields 3 1/2 pounds candy.............
