A different type of appetizer meatball...this one with the flavors and kick of hot tamales. :)

Ingredients
  • 1 1/2lb ground beef
  • 1/2lb ground pork
  • 2 1/2 cups corn bread crumbs
  • 1 egg
  • 8oz Spicy Tomato Juice cocktail, divided
  • 14oz tomato sauce, divided
  • 1T canned jalapenos, drained and diced
  • 1 small onion, grated
  • salt and pepper
  • couple T fresh parsley, chopped
  • 1/2 cup Queso Fresco, shredded

Directions
  1. Combine all ingredients other than half each of the Tomato juice and sauce.
  2. Form into small meatballs and arrange on wire rack, over cookie sheet.
  3. Bake at 350 for about 20 minutes.
  4. Serve either fondue style by heating the remaining juice and sauce and a bit of salt and pepper and dipping meatballs into it.
  5. Or, you can put them in a slow cooker, cover with the remaining tomato mixture and keep on warm
  6. Or, put back into a 9X13 and top with the sauce and bake another few minutes to warm through.

That sounds SO good! I'll have to buy some cornbread from Dixie Diner (local joint for home cooking) and cook them in a skillet, because I have no oven at the moment, but I do believe I have to try this! For about 15 people (mostly carnivorous males) should I double it? We are having lots of other things.

Blame mimosa! She wanted the recipe, so I told her I'd post it, but I haven't made them since I started takin' pics..it's killin' me...I feel so nekkid...I told Michelle she needs to take one for me. :)

Whoa Girlfriend! I emailed the recipe along with another so she could tell me which one to make and to my DELIGHT she said, "Well now that I have a recipe to go by, I'll just make them." And she did decide to go for this recipe rather than the "other". Just got off the phone with her and she did a test run today. She only cooked a few, but she's afraid she's going to cook the rest and have to make a new batch for C'mas because they were so good she's worried she won't quit eating them! Yay! She did make two substitutions, but only based on availability. She said the parsley at the store was just nasty looking but they had nice fresh cilantro so she got that instead. Then she forgot to buy jalapenos, but already had chipotle's in adobo at home so she used those. Trust me, she is NOT one to alter a recipe just for the heck of it. Weather and lack of motivation to get out in it again are the only reason she made the change. Can't wait to try them!!!! Thank you!!!!
