Barley Bacon Lentils and Tomatoes

- 3 slices of bacon ( I have always added more ) shopping list
- 1 small onion thinly sliced shopping list
- 1 cup dry lentils, rinsed shopping list
- 1 cup uncooked quick-cooking barley shopping list
- 2 teaspoons beef-flavored instant bouillion shopping list
- 1 teapoon cumin shopping list
- 1/8 teaspoon allspice shopping list
- 3 1/2 cups water 1 can stewed tomatoes, undrained shopping list
- 2 tablespoons chopped fresh parsley shopping list
How to make it
- In a large skillet, cook bacon over medium heat until crisp then remove and set to the side.
- Add onion and lentils to bacon drippings, cook over medium heat for 3 to 5 minutes or until onion is tender and lentils are slightly browned.
- Add barley, bouillon, cumin, allspice and water.
- Bring to a boil.
- Reduce heat to medium, cover simmer 15 minutes or until lentils are soft
- Add tomatoes
- Cook uncovered for an additional 15 minutes or until barley and lentils are tender.
- Just before serving, stir in parsley and crumble bacon over top
- **I have made this and served it on top of a large grilled portabello mushroom. It's pretty good
