Ingredients

How to make it

  • In a large skillet, cook bacon over medium heat until crisp then remove and set to the side.
  • Add onion and lentils to bacon drippings, cook over medium heat for 3 to 5 minutes or until onion is tender and lentils are slightly browned.
  • Add barley, bouillon, cumin, allspice and water.
  • Bring to a boil.
  • Reduce heat to medium, cover simmer 15 minutes or until lentils are soft
  • Add tomatoes
  • Cook uncovered for an additional 15 minutes or until barley and lentils are tender.
  • Just before serving, stir in parsley and crumble bacon over top
  • **I have made this and served it on top of a large grilled portabello mushroom. It's pretty good

    I usually make rice to go with roasted chicken, but last night, I made this instead. It was delicious, hearty, and had a nice spice. I thought my husband would hate it, but he was brave, tried it - and liked it! I posted a pic of the finished product. Yummy, great recipe! Hearty enough to be a meal on it's own. (I added extra bacon, too - I think 3 extra slices. Can't hurt, right?)

    Would this be good dropped in the center of a lump of mashed potatoes? I'm thinking the consistancy is more gravy like than soup like. Is that right?
