Tuscan Orzo Salad

- 1lb orzo pasta, cooked to package directions, drained, and rinsed in cold water shopping list
- 1 small green pepper, diced shopping list
- 1 small red pepper, diced shopping list
- 1 small orange or yellow pepper, diced shopping list
- 3-4 green onions, chopped shopping list
- 1/2 cup pitted kalamata olives, chopped shopping list
- 1/4 cup capers shopping list
- 1/2 cup Italian or Tuscan dressing(oil/vinegar based)--mine follows shopping list
- 1/2 cup asiago cheese, shredded or grated shopping list
- dash of crushed red pepper flakes(this can be omitted if you use the following dressing recipe) shopping list
- 1/2 cup fresh parsley shopping list
- ***Tuscan Dressing*** shopping list
- 1 cup dressing quality olive oil shopping list
- 1/4 cup red wine vinegar shopping list
- juice from 1/2 lemon shopping list
- 1T total of mixed dried herbs(ie parsley, oregano, basil, and please include some rosemary) shopping list
- 1t dried red pepper flakes shopping list
- 1 clove garlic, finely minced shopping list
- 1t toasted sesame seeds, finely ground shopping list
- 1/2t celery seed, ground shopping list
- dash of onion powder shopping list
- salt and fresh ground pepper shopping list
How to make it
- Blend all dressing ingredients, if using, in food processor, and set aside.
- Combine all remaining ingredients, but dressing and parsley, and toss to combine.
- Add dressing and parsley and, toss again.
- Refrigerate a few hours. Serve cold
