Ingredients
  • 1lb orzo pasta, cooked to package directions, drained, and rinsed in cold water
  • 1 small green pepper, diced
  • 1 small red pepper, diced
  • 1 small orange or yellow pepper, diced
  • 3-4 green onions, chopped
  • 1/2 cup pitted Kalamata olives, chopped
  • 1/4 cup capers
  • 1/2 cup Italian or Tuscan dressing(oil/vinegar based)--mine follows
  • 1/2 cup Asiago cheese, shredded or grated
  • dash of crushed red pepper flakes(this can be omitted if you use the following dressing recipe)
  • 1/2 cup fresh parsley
  • ***Tuscan Dressing***
  • 1 cup dressing quality olive oil
  • 1/4 cup red wine vinegar
  • juice from 1/2 lemon
  • 1T total of mixed dried herbs(ie parsley, oregano, basil, and please include some rosemary)
  • 1t dried red pepper flakes
  • 1 clove garlic, finely minced
  • 1t toasted sesame seeds, finely ground
  • 1/2t celery seed, ground
  • dash of onion powder
  • salt and fresh ground pepper

Directions
  1. Blend all dressing ingredients, if using, in food processor, and set aside.
  2. Combine all remaining ingredients, but dressing and parsley, and toss to combine.
  3. Add dressing and parsley and, toss again.
  4. Refrigerate a few hours. Serve cold

Looks and sounds really delicious! I especially like the sound of the spices in your dressing, and that Asiago cheese! Bookmarked + ^5


I made this today and it was VERY good. Just the right amount of crunch with the pasta. The Asiago cheese really lifts it up and is balanced out by the saltiness of the capers. And the olives?? I am a sucker for any pasta salad with Kalamata olives.

I would highly reccommend you make Keni's dressing with this. A bottled dressing just would not make it. I love the ground sesame seeds in your dressing. It really kicks it up and adds body!!

This salad would be perfect with grilled fish. Add a little grilled salmon or tuna and you would have a great lunch.... Thanks for the recipe Keni, it's a real winner!... Will try to post a photo tomorrow... Jim
