Chicken Schnitzel Recipe
I LOVE chicken and this recipe is a favourite of mine.

Ingredients
  • 4 boneless, skinless chicken breast halves
  • Note: You can follow this recipe for veal or pork.
  • 2/3 cup all-purpose flour
  • 1/2 tsp. garlic or onion powder
  • 1/2 tsp. salt
  • fresh ground pepper
  • 1 tsp. paprika
  • 2 large eggs, beaten
  • 1 cup seasoned bread crumbs
  • 1/4 cup vegetable oil
  • 2 Tbsp. butter
  • *Note: I always add butter to the cooking oil.
  • 1 lemon, cut into wedges

Directions
  1. Place the chicken breasts between 2 pieces of cling wrap and pound to a desired texture and thickness.
  2. In a shallow pie plate or dish, mix together flour, garlic or onion powder, salt, pepper and paprika.
  3. In second shallow bowl, beat eggs.
  4. In third shallow dish or plate, place seasoned breadcrumbs.
  5. One at a time, dip each pounded chicken breast first into the seasoned flour mixture, coating thoroughly and shake to dust off excess.
  6. Next, dip chicken breast in well beaten eggs, covering completely.
  7. Then coat chicken with bread crumbs.
  8. Place each breaded chicken breast on a plate or a small cooking sheet pan.
  9. In a large non-stick skillet, place vegetable oil and butter.
  10. Heat over a medium element.
  11. Place chicken in the skillet, and brown for about 5 minutes per side.
  12. Make sure the chicken is cooked thoroughly before transferring it to a plate that has been lined with about 4 sheets of paper towel.
  13. Serve with boiled, baked or mashed potatoes and your favourite vegetables.
  14. Garnish with lemon wedges.
  15. Serves 4

Sounds great, i had schnitzel in Austria a few years ago, ate it every day (called weiner schnitzel ,nut i think that means veal) LoVED it and never had it since........ im definately going to give this a try! thanks Lor :)

This recipe looks really good! Lots of variables here...could also add parmesan cheese to the bread crumbs and some capers to the dish and it would be Italian....ha!
