Mexican Sausauge Casserole Recipe
Great recipe for use of Pepper Jack Cheese comfort

Ingredients
  • 1 LLB. ground sausage {I use jimmy deans}Brown and drained
  • 4 oz. can diced green chilies
  • 1 onion diced{Prefer white}
  • 1 green pepper diced
  • 2 1/2 cups shredded Monteray Jack or pepper Jack Cheese
  • 18 eggs beaten
  • Additions if preferred{Sour cream or Salsa your choice and amount}

Directions
  1. In a greased slow cooker layer half each- Sausage chilies. onion. Pepper and cheese
  2. Repeat layers with remaining ingredients except eggs and Additions.
  3. Ending with cheese.
  4. Pour beaten eggs over Top cover and cook on low setting for 7-8 hours
  5. Serve with sour cream or salsa
  6. Given to me by a friend. Serving_ 10-12 people

That's a LOT of eggs....am wondering how many people this feeds?? And if I leave it in the cooker longer than 7 or 8 hours will it still turn out right? Love the ingredients.


Sorry buddys just added Serves 10-12 people.Do not leave in cooker longer than required time.

Great idea for a EASTER brunch ! as a bonus eggs are on sale then =) love the idea and i can't wait to try it !


Havent tried it either but like you all Im going to but I cant eat that many egss by myself so will ahve to wait for special ocassion. Hope its good{my Friend said it is. thanks for 5s and comments


Oh my gosh girl this looks good but those 18 eggs are gonna do me in LOL I'm going to make this but I think I'll cut back on the eggs and maybe use a carton of those Egg Beaters and add about 6 beaten eggs to those. That should do it. If you don't hear from me it's because after I enjoy this recipe I'll be sittin back with my feet up and chillin ;)
