Gnocchi With A Gorgonzola And Smoked Salmon Sauce Recipe

Ingredients

30ML BUTTER

180G GORGONZOLA, CRUMBLED

PINCH GROUND NUTMEG

45ML BRANDY (OPTIONAL)

190ML CHICKEN STOCK

250 CREAM

500G READY-MADE GNOCCHI

OLIVE OIL, FOR DRIZZLING

100G SMOKED SALMON, SLICED

PARMESON CHEESE AND FRESH HERBS, TO SERVE

Directions

MELT THE BUTTER IN A LARGE POT

ADD THE GORGONZOLA CHEESE AND STIR UNTIL IT HAS MELTED

ADD THE NUTMEG, BRANDY AND THE CHICKEN STOCK, THEN WHISK IN THE CREAM

BRING TO THE BOIL

PLACE THE GNOCCHI IN A LARGE PAN AND DREIZZLE WITH OLIVE OIL

COVER WITH A LID AND COOK UNTIL SOFT IN THE CENTRE

REMOVE THE LID AND FRYN UNTIL CRISP AND GOLDEN

ADD THE SALMON TO THE SAUCE AND LEAVE IT TO SIMMER FOR TWO MINUTES

POUR A LITTLE SAUCE INTO EACH DISH AND TOP WITH GNOCCHI

SEASON TO TASTE WITH SALT (BE CAREFUL WITH THE SALT) AND FRESHLY GROUND BLACK PEPPER AND GARNISH WITH PARMESAN SHAVINGS AND HERS.
