How to make it

  • Shell and Devein the shrimp
  • Cut the stem end of the jalapenos off and make sure to get all of the seeds and membrane out.
  • Put one Shrimp into each of the Jalapenos and warp with 1-2 strips of bacon. Secure bacon to the pepper with 1 toothpick on either end all the way through.
  • Prep the Red Rooster sauce by making the dip according to the directions on package, then add Red Rooster sauce to taste (it's REALLY spicy stuffy, but amazing with the shrimp).
  • Put the Kisses on a Barbeque grill once the coals have burned down quite a bit (more of a medium low heat if you use propane) and cook until the shrimp is firm and white, and the bacon is nice and crisp. It doesn't usually take more than 3-4 minutes per side to get them perfect.
  • Let them cool for a bit on a paper town so the bacon can crisp up even more, and enjoy with the Red Rooster Ranch Dip!

    Ive been experimenting with some sauces for the cajun kisses and I think Ive come up with a few good ones....1 is with a spicey cheeselike dip...and one is with a sour cream spicey dip..both good....I'll try them out on the 4th and let you know how it went.....Im still using the dip you recommended too.

    Awesome recipe! Technically, red rooster sauce is Vietnamese in origin rather than Thai, with the company founded by a Vietnamese immigrant who produces the wonderful sauce today in Rosemead, CA! Here's a wiki article http://en.wikipedia.org/wiki/Huy_Fong_Foods Thanks for the wonderful recipe!
