Squash Ritz Casserole Recipe
I got this recipe from a cook book called White Trash Cooking and made it for a pot luck,, everyone loved it and I always say where i got it,, no one believes the title haha,, enjoy!

Ingredients
  • 1 lb. yellow squash cut into rounds
  • 1/2 cup crumbled ritz crackers ( 23)
  • 1 onion chopped fine
  • 1/2 cup celery chopped fine
  • 1/2 cup grated sharp cheddar cheese
  • 1/4 cup green pepper chopped fine
  • 2 eggs beaten
  • .1 cup milk
  • 1/2 cup evaporated milk
  • 1/4 ts. salt
  • 1/4 tsp pepper
  • 2Tbsp butter melted

Directions
  1. Tenderize squash by boiling in a little bit of water, drain and mash.
  2. Mix all the other ingredients in with the squash.
  3. Butter a average size casserole dish
  4. Put mixture in dish and bake at 350 for 30 min.
  5. when done it should be smooth kind of like a pudding.
