How to make it

  • Heat oil in a pot over low heat.
  • Infuse the oil with the whole garlic and half of the onion, red pepper and cilantro for 2 or 3 minutes.
  • Raise the heat to medium high and saute the rice stiring constantly until light golden colored.
  • Add the Beans.
  • Cover the rice and beans with about 2 1/2 to 3 cups of the reserved bean cooking water.
  • Give it a quick stir, cover, reduce heat to low and cook for 20 minutes or until rice is cooked.
  • Add the other half of the onion, red pepper and cilantro anf fluff the rice gently with a fork.
  • Enjoy
  • P.S. Sorry if i'm a bit vague about the quantities and cooking time. I'm just really intuitive when i cook rice. Rice is one of those ``It's ready when you know it's ready`` Type of ingredients. It requires practice but when you know how to cook a good rice, it is quite rewarding.

    Mmmm!Love me some rice!So when u saute the rice, it doesnt burn it since the oil is in the pan right???I think i might try this and subsitute the black beans with gandules (pigeon peas) they turn out to look like tiny brown beans.This sounds excellent...
