How to make it

  • Heat oven to 400 degrees F. Line a baking sheet with aluminum foil.
  • In a small saucepan, combine jam, vinegar, soy sauce and red pepper over medium heat. Stir until smooth.
  • In a large bowl, toss chicken wings with half of the jam mixture. Place on the baking sheet and bake 50 minutes.
  • Brush wings with remaining jam mixture and bake 8 to 10 minutes or until chicken is no longer pink inside and outside is glazed. Serve immediately.

    Ok, out of the Raspberry wings and Honey Lime wings, the Honey Lime win on flavor. This was good, but would have been better if I had marinated the chicken before cooking. I used an organic fruit spread, so it was not as sweet as I expected. Next time, I would add some honey to the sauce if using an organic spread/jam/preserve. I basted the chicken wings every 10 minutes and they looked beautiful. Oh, in addition to the soy sauce, I would add sea salt before cooking. The sauce was good alone and could be used as a dipping sauce (hot garlic buttered bread, sounds wonderful), or use it as a topping on pork, beef, or chicken (I would not add salt if using it as a dip or topping).
