Sour Cherry Cobbler

- 2 cups pitted sour cherries shopping list
- 1/4 cup sugar shopping list
- 1 tablespoon quick-cooking tapioca shopping list
- 1 1/2 cups sifted flour shopping list
- 2 teaspoons baking powder shopping list
- 1/2 teaspoon salt shopping list
- 1/4 cup sugar shopping list
- 1/4 cup unsalted butter or margarine shopping list
- 1/3 cup milk shopping list
How to make it
- Preheat the oven to 425 degrees F.
- Butter a shallow 1 1/2-quart baking dish.
- Place in the dish:
- 2 cups pitted sour cherries
- Sprinkle over the cherries
- 1/4 cup sugar and 1 tablespoon quick-cooking tapioca
- In a medium bowl, combine 1 1/2 cups sifted flour, 2 teaspoons baking powder, 1/2 teaspoon salt, 1/4 cup sugar
- Stir to blend well.
- Cut 1/4 cup unsalted butter or margarine into small chunks and work it into the flour mixture until the mixture resembles tiny nuggets.
- Add 1/3 cup milk
- To the flour mixture and stir until the dough is just wet.
- Drop spoonfuls of dough on top of the cherries and bake in the oven for 30 minutes or until crust is light brown and cherries are bubbling.
- Let cool and serve.
- Serves 4 to 6
