Ingredients

2 cups pitted sour cherries

1/4 cup sugar

1 tablespoon quick-cooking tapioca

1 1/2 cups sifted flour

2 teaspoons baking Powder

1/2 teaspoon salt

1/4 cup sugar

1/4 cup unsalted butter or margarine

1/3 cup milk

Directions

Preheat the oven to 425 degrees F.

Butter a shallow 1 1/2-quart baking dish.

Place in the dish:

2 cups pitted sour cherries

Sprinkle over the cherries

1/4 cup sugar and 1 tablespoon quick-cooking tapioca

In a medium bowl, combine 1 1/2 cups sifted flour, 2 teaspoons baking powder, 1/2 teaspoon salt, 1/4 cup sugar

Stir to blend well.

Cut 1/4 cup unsalted butter or margarine into small chunks and work it into the flour mixture until the mixture resembles tiny nuggets.

Add 1/3 cup milk

To the flour mixture and stir until the dough is just wet.

Drop spoonfuls of dough on top of the cherries and bake in the oven for 30 minutes or until crust is light brown and cherries are bubbling.

Let cool and serve.

Serves 4 to 6
