Whipped Amaretto Pie Recipe

Ingredients

Crust

1 1/2 cups graham cracker crumbs

1/4 cup sugar

1/2 tsp. nutmeg

1/2 cup butter, melted

Filling

2 1/2 cups ricotta cheese

1 cup sugar

1 tbls. almond extract

1/4 cup Amaretto liqueur

1 cup toasted almonds, ground

1 cup semisweet chocolate chips, ground

1 cup heavy cream

Whipped cream to garnish

Shaved chocolate to garnish

Directions

Crust

Add all ingredients to mixing bowl and combine well

Press into 9 or 10 inch pie plate and freeze while making filling

Filling

In mixing bowl, mix Ricotta and sugar until smooth

Add almond extract and Amaretto and mix until blended

Stir in almonds and chocolate chips

In separate bowl, whip cream until stiff

Gently fold into filling

Freeze pie at least 3 hours before serving

If frozen over night, set out for 30 minutes or 1 hour in fridge before serving

Garnish with whipped cream and shaved chocolate

I love the way ricotta blends and cooks into a great filling. Amaretto, oh la la! A very favorite flavor combination. (Hmmm, been known to drink a splash of amaretto in some ginger beer, it is considered momma's bada** drink-kid laughs cuz I get silly after two)
