How to make it

  • Preheat oven to 350
  • In mixing bowl, blend first 6 ingredients and set aside
  • Separate biscuits
  • Dip both sides of each biscuit in cornmeal
  • Roll out each biscuit to 5 inch circles
  • Put 5 circles onto ungreased baking sheet
  • Spoon roast beef mixture onto circles
  • Brush edges lightly with water
  • Put remaining biscuits over meat mixture
  • Press edges with fork to seal
  • Using back of spoon, press indentation in center of each sandwich
  • Bake for 14-22 minutes or until golden brown
  • Fill each indentation with sour cream
  • Garnish with pimento and olive

    Made these last night and we loved them! So easy, and the roast beef was a nice change! You could use leftover cooked chicken or any other meat that goes with the mexican spices as well. This is definately a keeper for us!!

    Oh yum - that's gotta be good from the sounds of the ingredients...combining the taco sauce and bbq sauce has got to make an interesting taste treat. These will be fun to make (and eat, I'm sure!)...thanks, wynne!
