Ingredients
  • 1 ready made pie crust
  • Filling
  • 1 cup cooked ham, cubed
  • 1/2 cup wild rice, cooked
  • 1/3 cup red pepper, finely chopped
  • 1/4 cup scallion, thinly sliced
  • 1 4.5 oz. jar mushrooms, sliced and well drained
  • Custard
  • 3 eggs
  • 1 cup sour cream
  • 1 tbls. Dijon mustard
  • Salt and pepper to taste
  • Topping
  • 2 cups Swiss cheese, grated

Directions
  1. Preheat oven to 425
  2. Using a 9 inch pie pan, press crust into bottom and up sides of pan
  3. DO NOT DOCK CRUST
  4. Bake for 10-12 minutes
  5. Remove from oven and lower heat to 400
  6. In mixing bowl, add all filling ingredients and mix well
  7. In another mixing bowl, add eggs and beat until blended
  8. Add remaining custard ingredients and mix well
  9. Sprinkle 1 cup of Swiss cheese over bottom of cooled crust
  10. Spread filling mixture over cheese
  11. Pour custard mixture over filling
  12. Sprinkle with remaining Swiss cheese
  13. Bake for 30-35 minutes
  14. Let sit for 10 minutes before serving

Wynne, I'm a MN girl originally, so wild rice is a fave of mine - this sounds so incredibly good. I have some wild rice in the cupboard, and leftover ham in the freezer...I see this on the menu by end of next week. I'll take a picture if you'd like...Krum


Wynne, I made this for dinner tonight and it was EXCELLENT...the only change was that I didn't have any mushrooms, so they were omitted. What a different way to use up leftover ham! I did use gruyere because that's what I had, and it is basically just a good swiss cheese, so I don't think it altered the original flavor any. This is going in the "Keepers" file and will be made whenever I have leftover ham. Trader Joe's sells a cooked wild rice in a pouch that is really convenient and cuts down significantly on the prep here (wild rice takes so long to cook!). Thank you so much for this recipe...my husband liked it so much he asked me to put a piece on a plate for him to warm up for breakfast in the morning! Krum


This is a good recipe. I originally came across this recipe in 2005 and the WHOLE family loves it.

I usually buy fresh mushrooms and saute them, but everything else I do the same.

I suggest to anyone reading this just give it a go and you won't be disappointed.

It's great to make a couple of these and take to a pot luck.

Make sure you take the recipe with you, because someone will want it!
