Spicy Meatloaf

- 2 TBSP olive oil. shopping list
- 1 sweet onion. shopping list
- 4 cloves of minced garlic or more to taste. shopping list
- 2 pounds of lean ground beef. shopping list
- 1 pound of hot sausage. shopping list
- 3 TSP. salt. shopping list
- 3 TSP. fresh ground pepper. shopping list
- 2 eggs beaten. shopping list
- 1 cup of V8 vegetable juice I use hot and spicy. shopping list
- 3/4 cup of fresh chopped parsley. shopping list
- 2 TBSP. hot sauce I use Red Rooster. (Bruces Foods Iberia LA.) shopping list
- !/3 cup of ketchup a little more to top meatloafs before baking. shopping list
- 8 strips of bacon uncooked cut in half. shopping list
How to make it
- Preheat oven to 350 degrees.
- Heat oil in saucepan and saute onions for about 3 minutes add garlic and saute for 1 minute. Put onion and garlic in large mixing bowl and add ground beef and hot sausage salt and pepper, eggs, vegetable juice, Parsley, ketchup and hot sauce.
- Mix well and mold into two loaves in a 13X9 baking dish.
- Top with extra ketchup and bacon strips (4) per loaf and bake for 1 hour or until done.

this sounds good.. I am not a big meatloaf person but this one is a keeper.... I like the hot sauces added to it and the V-8 juice...^5
