Zucchini Stuffed With Chili

- 4-6 medium zucchini shopping list
- 1 onion, finely chopped shopping list
- 1 celery rib, finely chopped shopping list
- Note: Sometimes I add a couple of button mushrooms, chopped shopping list
- salt and black pepper shopping list
- 1/2 tsp. oregano shopping list
- 3-4 garlic cloves, minced shopping list
- 1-1/2 cups cooked pinto, Romano or black beans, drained and rinsed shopping list
- (or 1-15 ounce can) shopping list
- 1 cup grated fat free cheddar cheese - You can use shredded MozarellaCheddar blend, or whatever cheese you prefer. shopping list
- 1/2 cup salsa, your favourite store bought or homemade shopping list
- 1/4 cup finely chopped fresh parsley or cilantro shopping list
How to make it
- Prepare a medium-hot heat in the barbecue.
- Wash and slice the zucchini in half lengthwise.
- Scoop out the centers with the seeds, leaving about 1/4 inch of flesh in the shells.
- Sprinkle zucchini with salt and pepper and spray lightly with Pam.
- I like to mash the beans with a fork somewhat but not too much then combine the beans, onion, celery, mushrooms, oregano, 1/2 cup of cheese, salsa, and parsley/cilantro.
- Season with salt and pepper, if needed.
- Stuff the mixture into hollowed zucchini shells.
- Sprinkle remaining cheese on top.
- Grill with the lid down until the zucchini is tender and the stuffing
- is hot, 10 to 12 minutes.
- Note: Grilling with the lid down gives the zucchini extra smoke
- flavour.
- Carefully remove zucchini from the grill with a spatula.
- Serve at once.
- NOTE: I like to place the zucchini in either a BBQ basket for vegetables or on a PAM sprayed cookie tray.
