Cornmeal Oven Fried Chicken Recipe

This dish perks up the diner table for only $1.69 a serving. It's flavorful cornmeal/breadcrumb coating is a good variation from the usual.

Ingredients
- 1/2c dry breadcrumbs
- 1/2c cornmeal
- 1/3c grated parmesan cheese
- 1/4c fresh minced parsley or 4tsp.dried parsley
- 3/4tsp garlic powder
- 1/2tsp salt
- 1/2tsp pepper
- 1/2tsp onion powder
- 1/2tsp dried thyme
- 1/2c buttermilk
- 1 cut-up chicken(3 to 4lbs),skin removed
- 1Tbs butter
Directions
- In a large resealable bag,combine first 9 ingredients. Place the buttermilk in a shallow bowi. Dip chicken in buttermilk,then in the bag,a few pieces at a time,and shake to coat.
- Place in 13x9" baking pan coated with cooking spray. Bake at 375 for 10 mins;drizzle with butter. Bake 30-40 mins longer or till juices run clear.
