Tomato Pesto And Feta Tart

- 1 pack ready-rolled puff pastry shopping list
- 2 tbsp pesto shopping list
- 6½oz cherry tomatoes, halved shopping list
- 1¼oz feta or goats cheese, crumbled shopping list
- 1tbsp fresh basil, roughly chopped shopping list
How to make it
- Preheat the oven to 400F
- Take one sheet of puff pastry and cut it into fours,
- Place the pastry on a parchment lined baking sheet.
- With small knife, make a slit in a frame pattern about a half inch in from the edge. Do not cut through all the way.
- Place a dollop of pesto on each pastry tart and spread to cut lines.
- Slice the cherry tomatoes in half and place on top of pesto crowd them on in a random pattern.
- Place the pan in the oven for ten minutes remove and add the fete cheese.
- Add some fresh ground black pepper.
- Return to the oven for another eight minutes.
- Remove from oven and serve warm.
- Fantastic for a wine tasting party.
- * Note Black Olives make a nice alternative
