Fish With Rice Onions And Walnuts Recipe
The dark flavor of the caramelized onions give this fish dish it’s unique Middle Eastern twist. It is especially appealing when molded and garnished with parsley and Lemon wedges.

Ingredients
  • 1 ½ lbs Cod, Haddock or Sole fillets
  • ½ cup flour
  • ½ Tsp Salt
  • ½ Tsp fresh ground Black Pepper
  • ***********
  • 4 – 6 Tbls Olive Oil
  • ***********
  • 2 ½ cups Onion, slivered into thin crescents
  • 2 1/3 cups water
  • 1 cup Walnut halves
  • 1Tsp Salt
  • ************
  • 1 cup raw Long-Grain Rice
  • Parsley, finely chopped
  • Lemon Slices

Directions
  1. Pat Fillets dry with paper towels. Combine Flour, Salt and Pepper.
  2. Coat Fish with seasoned Flour, set on a rack. Let rest for 10 – 15 min.
  3. On medium high, Heat 2 – 3 Tbls Olive Oil in a skillet and sear Fish approximately 2 minutes per side. Remove to a rack or dish.
  4. Add 2-3 Tbls more Oilve oil to same skillet and add Onions. Fry until they are well caramelized and very dark. Turn heat to high and add 1/3 cup of water. Stir constantly until all the water is evaporated and onions begin to dissolve.
  5. Add remaining 2 cups water, Salt and Walnuts. Reduce heat and simmer approx. 10 minutes. Stir in Rice and layer Fish on the top. Cover and slowly simmer 20 -25 minutes until rice is tender.
  6. To Serve in a Mold.
  7. Carefully place the Fish on the bottom of a well oiled Mold and pack in the rice mixture. Immediately invert onto an appropriate size Serving Platter. Sprinkle with Parsley and arrange Lemon Slices on top.
  8. Without a Mold:
  9. Carefully remove Fish to a plate. Mound the Rice mixture on a Serving Platter. Arrange fish on top or around the Rice mixture and top with Parsley and Lemon Slices.

I love caramelized onion, but have never tried it with fish - this sounds fantastic, and I will definitely give it a try...still have a bit of walleye left in the freezer. Love the molding idea, too - will look very nice. Thanks, Jim!
