Fish With Rice Onions And Walnuts

- 4 firm fleshed white fish fillets such as cod, haddock, Halibut or Sole. (Approximately 3 lbs) shopping list
- ½ cup flour shopping list
- ½ Tsp salt shopping list
- ½ Tsp fresh ground black pepper shopping list

- 4 – 6 Tbls olive oil shopping list
- *********** shopping list
- 2 ½ cups onion, slivered into thin crescents shopping list
- 2 1/3 cups water shopping list
- 1 cup walnut halves shopping list
- 1 Tsp salt shopping list
- ************ shopping list
- 1 cup long-grain rice shopping list
- 1/2 - 1 Bunch Finely Chopped parsley. shopping list
- lemon slices shopping list
How to make it
- (1). Pat Fillets dry with paper towels. Combine Flour, Salt and Pepper. Coat Fish with seasoned flour, set on a rack. Let rest for 10 – 15 min.
- (2). On medium high, Heat 2 – 3 Tbls Olive Oil in a skillet and sear Fish approximately 2 minutes per side. Remove to a rack or dish.
- (3). Reduce heat to medium. Add 2-3 Tbls more Oilve oil to same skillet and add Onions. Fry until they are well caramelized and dark brown but not burnt. Turn heat to high and add 1/3 cup of water. Stir constantly until all the water is evaporated and onions begin to dissolve.
- (4). Add remaining 2 cups water, Salt and Walnuts. Reduce heat and simmer approx. 10 minutes. Stir in Rice and layer Fish on the top. Cover and slowly simmer 20 -25 minutes until rice is tender.
- (5). To Serve in a Mold.
- Carefully place the Fish on the bottom of a well oiled Mold and pack in the rice mixture. Immediately invert onto an appropriate size Serving Platter. Sprinkle with Parsley and arrange Lemon Slices on top.
- (6). Without a Mold:
- Carefully remove Fish to a plate. Mound the Rice/Onion mixture on a Serving Platter. Arrange fish on top or around the Rice/Onion mixture and top with Parsley and Lemon Slices.
