Ingredients

How to make it

  • (1). Pat Fillets dry with paper towels. Combine Flour, Salt and Pepper. Coat Fish with seasoned flour, set on a rack. Let rest for 10 – 15 min.
  • (2). On medium high, Heat 2 – 3 Tbls Olive Oil in a skillet and sear Fish approximately 2 minutes per side. Remove to a rack or dish.
  • (3). Reduce heat to medium. Add 2-3 Tbls more Oilve oil to same skillet and add Onions. Fry until they are well caramelized and dark brown but not burnt. Turn heat to high and add 1/3 cup of water. Stir constantly until all the water is evaporated and onions begin to dissolve.
  • (4). Add remaining 2 cups water, Salt and Walnuts. Reduce heat and simmer approx. 10 minutes. Stir in Rice and layer Fish on the top. Cover and slowly simmer 20 -25 minutes until rice is tender.
  • (5). To Serve in a Mold.
  • Carefully place the Fish on the bottom of a well oiled Mold and pack in the rice mixture. Immediately invert onto an appropriate size Serving Platter. Sprinkle with Parsley and arrange Lemon Slices on top.
  • (6). Without a Mold:
  • Carefully remove Fish to a plate. Mound the Rice/Onion mixture on a Serving Platter. Arrange fish on top or around the Rice/Onion mixture and top with Parsley and Lemon Slices.

    Hi Jim! This sounds wonderful!!! I love the addition of the carmelized onion and the walnuts. I also like the I can play with it a bit by molding it. On my to make list, especially since Lent starts next week. Thanks and High-five!;0)

    I love caramelized onion, but have never tried it with fish - this sounds fantastic, and I will definitely give it a try...still have a bit of walleye left in the freezer. Love the molding idea, too - will look very nice. Thanks, Jim!

    Wow - this sounds wonderful and beautiful, Jim! I adore the caramelized onions and walnut halves add here. And the mold idea is a must in my mind.
