Lime Cupcakes with Prickly Pear Frosting

- CAKES: shopping list
- 2 sticks unsalted butter, room temperature shopping list
- 2 cups sugar shopping list
- 4 large eggs, room temperature shopping list
- 2 3/4 cups all-purpose flour shopping list
- 1 teaspoon baking powder shopping list
- a teaspoon baking soda shopping list
- 1/8 teaspoon salt shopping list
- 1 cup milk shopping list
- 3 teaspoons fresh lime juice shopping list
- 2 teaspoons limes zest, chopped shopping list
- FROSTING: shopping list
- 1 stick unsalted butter, room temperature shopping list
- 3 cups confectioners' sugar shopping list
- 5 to 9 teaspoons prickly pear juice from 2 prickly pears shopping list
- 1/8 cup milk shopping list
How to make it
- CAKES:
- Beat butter on high speed until soft, about 30 seconds.
- Add sugar.
- Beat on medium high until light and fluffy, about 3 minutes.
- Add eggs one at a time, beat for 30 seconds between each addition.
- Whisk together flour, baking powder and baking soda in a bowl.
- Measure out milk and lime juice/zest.
- Add about a quarter of the flour to the butter mixture and beat to combine.
- Add about 1/3 the milk/lime mixture and beat to combine.
- Repeat above, alternating flour and milk and ending with flour.
- Scoop into cupcake papers to about 2/3 full.
- Bake 22 to 25 minutes OR until cake tester comes out clean.
- Remove from oven.
- Cool 10 minutes in pan.
- Remove from pan and cool completely.
- FROSTING:
- Puree prickly pear flesh and push through a strainer for the juice.
- Cream butter until light and fluffy.
- Add half the sugar and beat.
- Add the milk and juice and beat.
- Add the rest of the sugar and beat.
- Add more juice as desired for flavor and/or consistency.
