How to make it

  • CAKES:
  • Beat butter on high speed until soft, about 30 seconds.
  • Add sugar.
  • Beat on medium high until light and fluffy, about 3 minutes.
  • Add eggs one at a time, beat for 30 seconds between each addition.
  • Whisk together flour, baking powder and baking soda in a bowl.
  • Measure out milk and lime juice/zest.
  • Add about a quarter of the flour to the butter mixture and beat to combine.
  • Add about 1/3 the milk/lime mixture and beat to combine.
  • Repeat above, alternating flour and milk and ending with flour.
  • Scoop into cupcake papers to about 2/3 full.
  • Bake 22 to 25 minutes OR until cake tester comes out clean.
  • Remove from oven.
  • Cool 10 minutes in pan.
  • Remove from pan and cool completely.
  • FROSTING:
  • Puree prickly pear flesh and push through a strainer for the juice.
  • Cream butter until light and fluffy.
  • Add half the sugar and beat.
  • Add the milk and juice and beat.
  • Add the rest of the sugar and beat.
  • Add more juice as desired for flavor and/or consistency.
