Creamy Kielbasa And Greens Soup

- 8 oz. kielbasa (or your favourite sausage) cut into half circles shopping list
- 2 tbsp. olive oil shopping list
- 1 onion, chopped shopping list
- 2 cloves garlic, minced shopping list
- 1/2 tsp. dried thyme shopping list
- 1/3 cup all-purpose flour shopping list
- 4 medium red potatoes with skin on, chopped in bite-size pieces shopping list
- 6 cups low-sodium chicken broth shopping list
- 1 tsp. salt shopping list
- 1/2 tsp. pepper shopping list
- 1/2 cup milk shopping list
- 3 cups of your favourite greens (such as collards or spinach, or can sub with green cabbage), coarsely chopped shopping list
- 3 green onions, chopped shopping list
- 2 tbsp. fresh parsely, chopped shopping list
How to make it
- In a large pot or Dutch oven, over medium heat cook kielbasa, onions and garlic in 2 tbsp. olive oil until browned, about 5-7 minutes.
- Stir in flour, and thyme. Cook and stir for 1 minute. Add chicken broth and milk and whisk until smooth.
- Stir in potatoes, salt and pepper. Cover and bring to a simmer. Cook, covered, until potatoes are tender, about 25 minutes. Stir occasionaly during cooking.
- Add greens or shredded cabbage and cook until tender. Note: cabbage will take longer to cook than greens.
- During the last 5 minutes of cooking, stir in the chopped green onions and parsely. Serve hot, with crusty bread.
